Introduction

A few different people suggested that I give blogging about our low cal dinner ideas/adventures, so here we go. I'll post some pics of what we make, some recipes we're trying out, and definitely will post reviews of what we make.

We're also more than willing to take sugestions/requests, so if you have anything to add or want us to attempt a low cal version of something you love, fire away.

Our dinner last night, which checked in at a kickin' 600 calories a person, was Mexican Food themed. Pan grilled chicken with a mexican style seasoning I whipped up (chili powder, cayenne pepper, cracked black pepper, and some garlic salt) all over it, black beans and brown rice, and the best experimental food we've made to date, baked jalapeno poppers. I'll post what we made and the picture of the finished product at some point tonight or tomorrow. This evening's plan is to make a lasagna, which we're in the process of slapping together right now.   1. I was trying to think of a burger and fries kind of meal. This is what I came up with:
    Black bean veggie burger patty - 198 cal
    whole wheat bun - 150 cal
    plantain chips OR butternut squash fries - 102 cal
    That makes 450 calories! You can add condiments as you like and still stay under your 600 calorie mark, Mark! I usually eat black bean burgers with avocado, but if you don't want to waste the cals, I also suggest additionally flavoring the burger with cholula/another tasty hot sauce!
    I got the recipes from allrecipes.com which yield four servings, but these estimates are cals/serving.

  2. They're not the cheapest eggrolls but somehow this Banyan brand I love is super filing and low cal. I bet you can recreate some healthy eggrollslike those.
